GROWING METHOD: Training to stakes following traditional Puteolian custom

HARVEST PERIOD: Mid September
HARVEST METHOD: Manual with selection of grape cluster
VINIFICATION: Soft pressing with pneumatic presses, with cold maceration for 18 hours, static decanting of must, fermentation at controlled temperature (17-19°C) with selected yeasts. Maturation and aging on fine lees in steel vats for three months.
SECONDARY FERMENTATION: Italian method in steel vats. Re-fermentation temperature: 15-17°. Cold stabilisation of tartaric acid (-4°C). Microfiltration before bottling to separate yeast cells from the wine.
SERVING TEMPERATURE: Cool to a temperature of 6-7°C just before drinking

COLOUR: Pale pink with fine and persistent perlage.
