HARVEST METHOD: Manual, with selection of grape clusters
VINIFICATION: Stripping and traditional maceration for 6- 8 days at 28° - 30°C.
AGEING: The three wines are amalgamated after malolactic fermentation and aged for at least 6 months in small French oak barrels to blend together the characteristics of each grape species.
REFINEMENT: In bottles for at least 6 months in dark cellar to develop the bouquet.
SERVING TEMPERATURE: 16°C - 18°C.
STOREAGE: In a cool, not too damp environment.

TASTING NOTES
COLOUR: Brilliant ruby red
AROMA: fruity cherry flavours, notably black cherry and violet, with spicy notes of cinnamon and vanilla.
TASTE: dry, harmonic with a velvety medium structure, balanced aftertaste and pleasant notes of black cherries.
FOOD PAIRING: red meats and game, aged cheeses.
