GROWING METHOD: Cordon trained and spur-pruned
AGE OF VINES: From 10 to 30 years old
HARVEST TIME: Mid September
HARVEST PERIOD: Manual with selection of grape cluster
VINIFICATION: Soft pressing with pneumatic presses, static decanting of must, fermentation at controlled temperature (17-19°C) with selected yeasts. Maturation and aging on fine lees in steel vats for three months.
SECONDARY FERMENTATION: Italian method in steel vats. Refermentation temperature: 15-17°. Cold stabilisation of tartaric acid (-4°C). Microfiltration before bottling to separate yeast cells from the wine.
SERVING TEMPERATURE: Cool to a temperature of 6-7°C just before drinking.

COLOUR: Straw yellow. Light perlage that is fine and persistent
AROMA: Rich scents of citrus fruits and green apple.
FLAVOUR: Well balanced, with crisp acidity and tangy fresh and fruity notes.
FOOD PAIRING: Ideal as an aperitif, it can be served throughout the entire meal, with cooked fish, light and delicately flavoured dishes as well as with raw fish and shellfish dishes.
